I LOVE caesar salads….what about you? Problem is a traditional ceasar isn’t all that healthy but using some Bramble Hill greens & this avocado dressing makes this a ceasar you can feel good about eating on the regular!
Use either Bramble Hill’s FarmHER Mix or Pea Shoots as your greens
– chopped cucumber
– thinly sliced red onion
Croutons: I often like to make my own. Have you tried this? Great way to use up bits of leftover bread. Simply cube up the bread, toss in a bowl with a bit of olive oil, splash of balsamic vinegar, salt & pepper, mix well. Bake in oven on 275-325˚F. Cool before putting in your salad.
Avocado Caesar salad dressing
Simple just put all ingredients in food processor and blend:
1 avocado
2 cloves garlic
2 tbsp lemon juice
1 tbsp olive oil
1 tbsp Dijon mustard
pinch of salt & ground pepper
2 tbsp water
OPTIONAL: 1/2 teaspoon anchovy paste
BONUS: The avocado in this dressing makes it smooth and creamy without all the extra oil & raw egg yolk usually found in Caesar dressings. Because there is nothing raw in it – it will also last a week or so in the fridge.
